The December 2021 harvest:
Viscous, and sweet with a bouquet of orange blossoms. The palate finishes with punches of citrus fruits, mandarin, orange and limes.
The April 2021 harvest:
This is a thick, textural late season honey. Very rich with subtle notes of chamomile and jasmine. The timing is right to turn this bad boy into an excellent Anzac biscuit.
The December 2020 harvest:
The bees have really worked hard to deliver this pungent explosion of floral scents and flavours. Almost confusing, this big honey hits hard then tails off into Australian notes of bark, wattle and native flowers.
