Sylvia & David host their hives in a back yard chock-full of herbs, flowers and seasonal vegetables. The bees are a short fly-over from the Tally Ho Reserve, and the entrance of the hives are always buzzing.
Sylvia declares the hive’s honey to be the best she’s ever tasted (although she accepts there may be some unconscious bias), with honey that is sweet and light, yet thick with displaying lingering floral notes. Yum!

The January 2022 harvest:
Hazy to the eye yet soft and silky mouth. Hints of liquorice and milk chocolate reminiscent of old school chockie bullets.
The February 2021 harvest:
If honey was a Rutherglen Tokay, this would be its Reserve; fruity, orange marmalade, yet silky and spreadable. Intense floral notes with a hint of charring on the finish.
The December 2020 harvest:
Sweet and light, yet thick, displaying lingering floral notes. Think carnival toffee apples.
